Salmon With Lemon Caper Sauce

My neighbor Leslie has seven kids and is a fabulous baker. Her husband goes fishing up north every year and brings home some amazing fish. The result is great food, and the recipe below leads the charge:

3 lbs. fresh salmon

1 ½ tbp lemon juice

2 tbsp olive oil

1 tbsp butter

1 tbsp Dijon mustard (I like Maille)

4 garlic cloves, minced

2 dashes pepper

3 dashes salt

1 tsp dried basil

1 tbsp fresh dill

3 tbsp capers

Mix all ingredients except the fish and bring to a boil. Boil for 5 minutes. Pour over fish and wrap the whole thing in a foil packet. Bake in a slow oven (275F) 50 minutes, or grill outside for 15 minutes.

An alternative sauce is:

3 tbsp honey

1 tbsp grated orange peel

1 tbsp grated lemon peel

Juice of 1 lemon

2 tbsp tarragon

Blend, brush on salmon and barbeque or grill. I wrap in foil and barbeque.
