Shrimp, Avocado and Pineapple Salad

Sounds like a strange combination? Not so! Try it and enjoy.

1 lb peeled, deveined and cooked shrimp

12 oz. fresh pineapple chunks (you can use canned but you can also but fresh chunks which are far better

2 avocados, pitted, peeled, coarsely chopped

1 bunch cilantro, finely chopped

Mix all the above.

Prepare dressing:

3 tbsp. fresh lime juice

2 tbsp. pineapple juice

2 tbsp. fish sauce (nam pla or nuoc nam)

2 tbsp. olive oil

1 tbsp. sugar

2 thinly sliced shallots (optional) ½ jalapeno, seeded and minced

Mix all the above. Toss with salad. Eat and enjoy.
