Irina's Stuffed Cabbage

Mix together: 2-3 lb ground pork, garlic and onion chopped in food processor, add chopped fresh parsley or dill, salt, black pepper, 1 – 1.5 cup of uncooked rice, 1 large egg.

Place whole head of cabbage in a pot, cover with water, and bring to a boil.

Turn the heat off, put cover on and let it sit for 10 minutes.

Drain the water, peel off cabbage leaves, cut out the center stem part.

Put a portion of meat mixture in the corner of a leave and roll and fold to make a packet.

Place in the pot or crock pot.

For sauce: 2 cups of V8 or tomato juice, 1 cup of crushed or plum tomatoes (chopped), shredded carrots (optional), 1 medium onion coarsely chopped, 1 cup of bottled salsa (optional).

Mix all ingredients, pour over the staffed cabbage.

Bring to a boil and simmer till done (1 hour approximately) or set crock pot overnight on low setting. Bone Appétit!
