Greek Style Mushrooms

When I was a kid, my father used to take me wild flower picking or wild mushroom hunting every Saturday. Once we were done, we'd go to Acropolis, a fabulous Greek restaurant in Tel Aviv, where I'd consume rise and Greek-Style mushrooms under minor duress before I'd get two servings of luscious Bavarian cream with tons of grated chocolate on top.

I am very fond of these Greek mushrooms, and wanted to share the recipe with you.

2 lbs. mushrooms, halved

1 tsp salt

2 tbsp lemon juice

2 large onions, chopped

2 tbsp canola oil

2 1/2 cups beef broth

1 small can tomato paste

1 tsp sugar

1 bunch finely chopped dill

Put mushrooms, salt and lemon juice in a pot, cover with water and bring to a boil, Drain.

Sauté; onions in oil 5-7 minutes. Add mushrooms, broth and tomato paste and simmer, covered, 45 minutes. Add remaining ingredients and heat through.
