Letcho (Pepper and Sausage Stew)

One of my good friends growing up was a girl names Malka. Her mother used to make an amazing pepper stew that I also found in Café Kor in Budapest. It’s a fabulous dish. Try it!

2 tbsp. safflower oil

3 onions, chopped

4 green peppers, cubed

2 red peppers, cubed

1 small can tomato puree

3 ripe tomatoes, chopped

1 lb. smoky, sweet sausages, thinly sliced

1 tsp salt

2 tsp. paprika

½ cup water

Sauté onions until soft but not brown, abuot 5 minutes. Add the peppers and cover. Cook for 5 minutes. Add remaining ingredients and cook 30 minutes on low heat, covered, adding a little water if necessary.

Dive in with both forks!
