Fake Chimichurri Chicken

Chimichurri is an Argentinean steak sauce chock full of herbs and spices. This is my own version of it which works great with chicken, both grilled and on top of the stove.

½ cup chopped fresh cilantro

1 large shallot, peeled and minced

1 3” piece of ginger, peeled and grated (a micro plane is perfect for this)

3 garlic cloves, peeled and minced

2 tbsp hot pepper sauce

¼ cup chopped green chili (canned)

¼ cup extra virgin olive oil

¼ cup lemon juice

1 tsp salt

Mix all ingredients. Marinade chicken parts (I skin them off) in the mixture overnight or at least four hours. Grill or cook on top of stove. Serve with marinade, a.k.a. Fake Chimichurri.
