Strawberry Shortcakes

Pancake batter:

¾ cup whole wheat flour

¾ cup all purpose flour

2 tbsp sugar

1 ½ tsp baking powder

¾ tsp baking soda

2 egg whites

1 ¾ non fat Greek yogurt

1 tbsp canola oil

½ tsp vanilla extract

Mix dry ingredients. In a separate bowl mix wet ingredients. Stir together gently. Do not overmix. Let batter rest 10 minutes.

Coat skillet or griddle with Pam spray and heat for 2 minutes. Ladle ¼ cup batter per pancake. Batter will be thick. Cook until golden brown, 1-2 minutes per side.

Topping:

1 lb. skim ricotta cheese or Greek yogurt

2 tbsp skim milk

6 tbsp powdered sugar

½ tsp vanilla extract

1 lb fresh strawberries, stemmed and sliced

Mix all but strawberries until smooth. Layer pancakes with cheese mixture and strawberries. Enjoy!
