FUDGY CHOCOLATE PUDDING

A couple of years ago Dick and I discovered a treasure hidden in the hinterland of England. It was called the Pudding Club, and it served the most amazing puddings (English desserts) ever, plus a fabulous Bubble and Squeak (recipe can be found in my recipe archive on www.anatbird.com).

We liked many of the puddings, and, as you can imagine, tried too many. But a recent discovery that is worth sharing is this chocolate pudding that is prepared in the weirdest way possible and creates its own fudge sauce after baking. Try it!

3 oz. dark chocolate, chopped

1 ½ oz. butter

½ cup milk

6 oz. sugar

4 oz. plain flour

2 tsp. baking powder

2 oz. dark brown sugar

3 oz. white sugar

2 tbsp. cocoa powder

7 fl. Oz. water

Preheat oven to 325F.

Put chocolate, milk and butter into a medium size pan and heat slowly to melt. Stir flour, sugar, baking powder and mix into the melted chocolate. Pour into a greased 4 cup baking dish. Mix the brown sugar, sugar and cocoa and scatter over the top - DO NOT MIX INTO THE BATTER. Then pour on the water - again not mixing - and bake for 1 hour. Leave to stand at room temperature to cool. This pudding has its own fudge sauce. With vanilla ice cream its very close to heavenly.
