Sweet Cheese Souffle

SWEET CHEESE SOUFFLE

I grew up with quark cheese (or fromage Blanc). It's white cream cheese that has very little fat and tastes very milky. I love it! This soufflè recipe is the best way to make the cheese airy and sweet. You can find Fromage Blanc at Whole Foods and lots of other places. Don't use Philadelphia cream cheese.

6 oz. fromage blanc

3 / 4 cup sugar

4 large egg yolks

1 tbsp. freshly grated lemon zest

6 large egg whites

Preheat oven to 350F. Butter and sugar 8 ramekins or soufflè dishes Ɠ / 4 cup size). Mix cheese and sugar in mixer until light and fluffy. Add yolks and lemon zest and mix well. Beat white and fold in carefully. Put in 6 soufflè cups and place them in a large baking pan half filled with water. Bake in the middle of the oven 25 - 30 minutes.

You can serve with Grand Marnier - marinated strawberries. I like the pristine nature of the cheese.
