Cinnamon Chocolate Crackle Cookies

Dick loves these cookies, and they make the house smell great.  Try them for the holidays.

 

1 lb. bittersweet chocolate (Lindt tradition or Valrhona 54%)

¾ cup flour

2 tsp. cinnamon

½ tsp. baking powder

A pinch salt

½ stick butter, softened

½ cup sugar

¼ cup brown sugar

2 eggs, lightly beaten

2 tsp. Pure vanilla extract (I like Tahitian)

 

Preheat oven to 375F.  Line 3 cookie sheets with parchment paper.

 

Melt 10 oz. of the chocolate over very low heat and set aside.  Coarsely chop the remaining chocolate into chunks.  Mix flour, cinnamon, baking powder and salt in a small bowl.

 

Beat butter and sugars in mixer bowl fitted with paddle attachment until fluffy.  Add eggs and vanilla, mixing well.  Add chocolate and blend well.  Slowly beat in the flour mixture on low speed until well incorporated.  Stir in the chopped chocolate.

 

Drop rounded tablespoons 1 1/2 “ apart.  Bake 10 minutes or until the cookies are just set and the top is crackled.
