Maple Mustard Glazed Chicken

When Dick is on a diet, which usually happens this time of year, I look for lean

recipes to give him encouragement. The one below is such a recipe, and it is

delicious. Try it!

 

2 tsp. safflower oil

4 skinless, boneless chicken breast halves

½ tsp. black pepper

½ tsp. salt

¼ cup chicken broth

¼ cup maple syrup

2 tsp. chopped fresh thyme

2 garlic cloves, thinly sliced

1 heaped tbsp. stone ground mustard

 

Preheat oven to 400F.

 

Heat a large skillet and add oil. Season chicken with salt and pepper. Add to

pan and sauté until browned on each side. Remove from pan and add remaining

ingredients except for mustard. Bring to boil, scraping pan to loosen browned

bits. Cook for 2 minutes, stirring frequently, and add mustard. Return chicken

to pan, spoon sauce over and bake 15 minutes. You can thicken the sauce after

chicken is done by boiling down if desired.
