HERB AND BUTTER-ROASTED CHICKEN

2 cups fresh cilantro, chopped

2 cups mint leaves, chopped

3 garlic cloves, minced

3 tbsp. chopped fresh ginger

½ cup fresh lime juice

3 tbsp. melted butter

1 tbsp. ground cumin

½ tbsp. paprika

Salt

4 chicken breasts

 

Combine all ingredients but chicken and process in food processor. Spread the

chicken breasts with the herb butter and refrigerate at least 4 hours.

 

Preheat the oven to 425F. Bring chickens to room temperature. Roast the

breasts for 25-30 minutes or until juices run clear when pierced. Let rest for 10

minutes before serving.

 

Mashed potatoes are a perfect companion to this delicious and simple dish.
