Fruit Pudding Cake

 Simple and delicious. A large dollop of whipped cream will enhance the flavor (but, then again, it does to practically every food!).  Vanilla ice cream works as well.

  • 1 cup Greek yogurt
  • 1 tsp. baking soda
  • 1 cup flour
  • 1/2 cup sugar
  • 1.3 cup honey
  • 2 ¼ cup berries (all but raspberries)

Preheat oven to 350F and Pam an 8” square baking dish.

 Stir together yogurt and baking soda, then add remaining ingredients but berries and mix just until combined.  Fold in berries and pour batter into baking dish.  Bake 30-35 minutes until puffy and golden and toothpick comes out clean.
