Spicy Tater Tots

 Perfect snack, especially after a wild basketball game at the Bird household.

  • 3 lbs. baking potatoes
  • 2 scallions, chopped
  • ¼ cup milk
  • 2 tbsp. yogurt
  • 1 tbsp. butter, softened
  • ½ tsp. ground pepper
  • 2 tsp. salt
  • 4 tbsp. grated parmesan
  • 2 large eggs, beaten with 1 tbsp. water
  • ½ cup grated parmesan
  • Oil for frying (I used safflower)

 Preheat oven to 400F.  Prick potatoes with fork and bake on a rack 75 minutes until very soft.  Cut in half as soon as you can handle and scoop flesh into a mixing bowl.  Discard skin and mash.  Add all ingredients up to the eggs and combine well.

 Roll into balls.  Dip in egg and then grated parmesan.  Heat oil in large skillet until shimmering and very hot.  Fry until golden, about 3 minutes per side.  Drain on paper towels.

 Serve with the following mixture:

  • 1 cup Greek yogurt
  • 1 tsp. sriracha
  • ½ tsp. hot Hungarian paprika
  • ½ tsp. garlic salt
