Mu Shu Chicken
I like Chinese food but too often it’s too greasy for me. Here’s a simple recipe for Mu Shu chicken that won’t break your caloric bank. You can use lettuce wraps instead of tortillas or pancakes.
- 3 tbsp. soy sauce
- 2 tbsp. mirin or dry sherry
- 1 ½ tbsp. hoisin sauce
- 1 tsp. rice vinegar (don‘t overdo)
- 1 tsp. dark sesame oil
- 1 tsp. garlic (add more if you like)
- 2 tbsp. minced peeled ginger (I grate it)
- 1 cups shredded green cabbage
- 1 cups shredded red cabbage
- ½ cup shredded carrots
- 2 skinless chicken breasts, cooked and thinly sliced
- ¼ cup sliced scallions
Combine and whisk together first four ingredients. Heat up sesame oil and quickly sauté garlic and ginger. Add sauce mixture and veggies and stir for a minute. Add chicken and scallions. Heat thoroughly – another minute or two. Enjoy!
