Mu Shu Chicken

 I like Chinese food but too often it’s too greasy for me.  Here’s a simple recipe for Mu Shu chicken that won’t break your caloric bank.  You can use lettuce wraps instead of tortillas or pancakes.

  • 3 tbsp. soy sauce
  • 2 tbsp. mirin or dry sherry
  • 1 ½ tbsp. hoisin sauce
  • 1 tsp. rice vinegar (don‘t overdo)
  • 1 tsp. dark sesame oil
  • 1 tsp. garlic (add more if you like)
  • 2 tbsp. minced peeled ginger (I grate it)
  • 1 cups shredded green cabbage
  • 1 cups shredded red cabbage
  • ½ cup shredded carrots
  • 2 skinless chicken breasts, cooked and thinly sliced
  • ¼ cup sliced scallions

Combine and whisk together first four ingredients.  Heat up sesame oil and quickly sauté garlic and ginger.  Add sauce mixture and veggies and stir for a minute.  Add chicken and scallions.  Heat thoroughly – another minute or two.  Enjoy!
