Sweet and Spicy Chicken Thighs

 Chicken thighs are the “other white meat”.  In fact they’re better.  They’re juicy and perfectly sized for anything from a snack to a full meal.  Here is an easy recipe to prepare them.

  • 3 garlic cloves, minced
  • 3 star anise
  • ½ cup fresh lime juice
  • ½ cup soy sauce
  • 4 tbsp. honey (I like acacia honey)
  • 8 boned chicken thighs

Whisk all ingredients but the thighs until well combined.  Marinate thighs in the mixture for at least 2 hours, preferably overnight.

Preheat oven to 450F.  Transfer chicken and marinade to a disposable foil 9x13 pan.  I like to bake the thighs skinless.  If you prefer to have the skin on, put the skin side down.  Roast for 20 minutes and turn over for another 15 minutes, basting occasionally, until the thighs are deep, rich brown.

Serve with basmati rice.
