Faux Morrocan Carrot Salad

 I love carrots in every shape and form.  But they’re best raw, if they’re fresh, sweet carrots.  Try this recipe.  It’s easy and delicious.  Perfect with grilled any protein (my recommendation: buffalo burgers).

  •  2 lbs. carrots, peeled and finely grated
  • 4 radishes, finely grated (if you don’t like radishes just eliminate them)
  • 1 cup cilantro leaves, finely chopped
  • 4 tbsp. fresh lemon juice
  • 1 tsp. brown sugar
  • ¼ cup fresh dill, finely chopped
  • ¼ cup olive oil
  • Salt, pepper

Toss everything but the cilantro leaves and let sit for 30 minutes.  Add cilantro and dill, toss and serve.
