Cheesy Corn Bread
- 2 cups plain Greek yogurt
- 1 cup cake flour
- 1 cup cornmeal
- 1 tbsp. baking powder
- 2 cups grated cheese (I use half parmesan and half gruyere)
- 4 eggs
- ¾ tsp. salt
- ½ tsp. pepper
- 2 cups frozen corn, defrosted or freshly shucked
- Optional: a finely chopped jalapeno pepper or 1 can of green chillis, chopped
Preheat oven to 350F. Spray loaf pan with Pam.
Combine all ingredients until well mixed. Put in pan and bake until golden and solid, 35-40 minutes.
Can’t be any easier than this!
