Cheesy Corn Bread

  •  2 cups plain Greek yogurt
  • 1 cup cake flour
  • 1 cup cornmeal
  • 1 tbsp. baking powder
  • 2 cups grated cheese (I use half parmesan and half gruyere)
  • 4 eggs
  • ¾ tsp. salt
  • ½ tsp. pepper
  • 2 cups frozen corn, defrosted or freshly shucked
  • Optional: a finely chopped jalapeno pepper or 1 can of green chillis, chopped

Preheat oven to 350F.  Spray loaf pan with Pam.

Combine all ingredients until well mixed.  Put in pan and bake until golden and solid, 35-40 minutes.

Can’t be any easier than this!
