Pumpkin Gingerbread Bars

  •  2 eggs
  • ½ cup brown sugar
  • ¾ cups solid pack pumpkin
  • 2 tbsp. molasses
  • 1 tsp. vanilla extract
  • ¾ cups flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • Confectioners' sugar for decoration

Preheat oven to 375F.  Spray a 9” square pan with pam.

Beat eggs in mixer for 3 minutes.  Add sugar, pumpkin, molasses and vanilla.  Beat at medium speed 2 minutes.  Add remaining ingredients and stir well.

Pour into pan and bake 20 minutes or until a wooden pick comes out clean.

Cool and sprinkle with confectioner’s sugar.  Serve warm – with whipped cream, of course.
