Chicken Basque Style

 Ingredients

  • 1 chicken, cut into 6 or 8 pieces
  • 1 onion, chopped
  • 2 red peppers, chopped
  • 4 tbsp. flour
  • Fresh bouquet garni (thyme, bay leaf, oregano)
  • 2 carrots, peeled and sliced
  • 1 1/2 lbs. very ripe and juicy tomatoes
  • 2 cups chicken bouillon
  • olive oil
  • salt, pepper,

Instructions

Preheat oven to 350F.

Brown the chicken in hot olive oil on all sides in a Le Crueset Dutch oven. Remove from pan. Put onion and carrots in pan and sauté 5 minutes.. Add herbs, carrots and tomatoes and cook on medium-high heat until tomatoes emit their juices, about 7-8 minutes, stirring occasionally. Add flour and cook 1 minute, stirring. Add bouillon and stir until well combined. Bake in oven, covered, 1 1/2 hours.
