Summer Fruit or Berry Buckle

 

Ingredients

  • 6 tbsp butter, room temperature
  • 1 3/4 cup flour
  • 2 tbsp light brown sugar
  • 1/2 tsp cinnamon
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups berries (blueberries, blackberries, raspberries) or peaches or apricots

Instructions

  1. Position rack in center of oven and preheat to 400F. Pam a 11x8 1/2" baking dish.
  2. Combine 1/4 cup flour, brown sugar and cinnamon. Add 2 tbsp butter and work into a uniform streusel. Set aside
  3. Place 1 1/2 cup flour in large mixer bowl; add sugar, baking powder and pinch of salt. Add milk, eggs, vanilla and 1/4 cup butter. Beat 30 seconds on low speed, then on high speed for 2 minutes. Spread in baking dish. Spread fruit on top and crumble streusel evenly on top. Bake until golden brown and clean toothpick stage 30-35 minutes. Cool.

Serve with whipped cream or warm up and serve with vanilla ice cream
