Tandoori-Spiced Chicken Breasts

 

Ingredients

  • 1 small onion, chopped
  • 3 garlic cloves, chopped
  • 1" piece fresh ginger, peeled and minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp water
  • 1/2 cup plain yogurt
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne
  • 1/8 tsp each ground mace, cloves, cinnamon and nutmeg
  • 3 whole chicken breasts (2 1/2 lbs) halved and skinned

Instructions

  1. MARINADE: In blender or food processor mix onion, garlic, ginger, lemon juice and water into a paste. In a bowl combine with remaining marinade ingredients.
  2. Score the chicken with a knife but do not cut all the way through. Combine with marinade and refrigerate overnight.
  3. Grill or broil the chicken 6" from coals or broiler element 7 minutes on each side or until cooked through.
  4. Serve with rice and salad.
