Tandoori-Spiced Chicken Breasts
Ingredients
- 1 small onion, chopped
- 3 garlic cloves, chopped
- 1" piece fresh ginger, peeled and minced
- 2 tbsp fresh lemon juice
- 1 tbsp water
- 1/2 cup plain yogurt
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne
- 1/8 tsp each ground mace, cloves, cinnamon and nutmeg
- 3 whole chicken breasts (2 1/2 lbs) halved and skinned
Instructions
- MARINADE: In blender or food processor mix onion, garlic, ginger, lemon juice and water into a paste. In a bowl combine with remaining marinade ingredients.
- Score the chicken with a knife but do not cut all the way through. Combine with marinade and refrigerate overnight.
- Grill or broil the chicken 6" from coals or broiler element 7 minutes on each side or until cooked through.
- Serve with rice and salad.
