Rabbit or Cornish Hens in Moroccan Dried Fruit

Ingredients

  • 1 rabbit or2 Cornish hens
  • 1 tbsp olive oil
  • salt and pepper
  • cinnamon (for hens plus 1 tsp)
  • 3/4 tsp. cumin
  • 3/4 tsp. black peppercorns
  • 2chicken boullion cubes
  • 2 oz good quality prunes
  • 2 oz good quality dried apricots
  • 2 oz white raisins
  • 2-3 cups water

Instructions

  1. Heat oil in a Dutch oven or Le Crueset. Season rabbit or hen with salt, pepper and cinnamon. Brown on all sides. Add remaining ingredients and bring to a boil. lower heat to simmer and cook for 45 minutes or until done.

Additional Notes

Serve with couscous or with beet and carrot puree.
