Lemon Layer Cake

Cake:

  • 2 cups sifted cake flour
  • 3/4 tsp baking soda
  • pinch salt
  • 1/2 cup milk
  • 3 tbsp. lemon juice
  • 1 stick butter softened
  • 1 cup sugar2 eggs
  • Frosting:
  • 1 cup heavy cream
  • 1/2 cup confectioners' sugar
  • 1/2 cup lemon curd

Preheat oven to 375F.  Spray t2o 8" round cake pans.

Sift flour, baking soda and salt.  Stir separately milk and lemon (mixture will curdle).

Beat butter until creamy.  Add sugar and beat until fluffy.  Add eggs 1 at a time, beating well after each addition.  Alternately add flour and milk mixtures.  Divide batter between pans and bake in the middle of the oven 20 minutes (toothpick test).  Let cool in pan for 10 minutes, then turn out and cool completely.

Beat cream and confectioners' sugar until just gold soft peaks.  Fold in lemon curd.

Assemble cake.
