Chicken and Spinach Burgers

 On a plane to Tel Aviv, Israel I read the Israel newspaper and saw this recipe.  It sounds fabulous.  Try it.  I certainly will!


  • 1 lb. ground chicken
  • Salt and pepper
  • 1 egg
  • ½ cup breadcrumbs
  • 2 minced garlic cloves
  • 1 cup spinach or young kale leaves
  • 1 tbsp. olive oil
  • 2 tbsp. lemon juice




  • 1 onion, peeled and sliced
  • 1 thinly sliced lemon, no seeds
  • 2 cups chicken bouillon
  • 1 lb. spinach
  • Salt and pepper


Combine all ingredients for the burgers until well mixed.  Form into tomato-size balls and flatten into hamburgers.  Sauté in safflower oil until browned on both sides.  Drain on paper towels.  Retain the skillet.


Sauté onion and lemon slices in same skillet until golden brown over medium heat.  Add remaining ingredients and the chicken burgers.  Season with salt and pepper and cook over medium-low heat until slightly thickened.
