Red Pepper SaladRed Pepper Salad (with slight adaptations from me)
Sautee onions in oil until soft, about 10 minutes. Add peppers and cook well, stirring occasionally, about 20 minutes. Add remaining ingredients and cook to blend, 5 minutes. Process in a food processor and pulse until coarse. Eat hot or cold, by itself or on bread, inside pita or as a sauce for roasted chicken. |
