Red Pepper Salad

 Red Pepper Salad (with slight adaptations from me)

  • 2 tbsp. olive oil
  • 2 cups chopped yellow onions
  • 1 tbsp. sweet paprika
  • 7 sliced red peppers
  • 1 cup peeled, grated carrots (2 large)
  • 1 tsp. sugar
  • ½ cup chopped cilantro
  • Salt and pepper

 Sautee onions in oil until soft, about 10 minutes.  Add peppers and cook well, stirring occasionally, about 20 minutes.  Add remaining ingredients and cook to blend, 5 minutes.  Process in a food processor and pulse until coarse.  Eat hot or cold, by itself or on bread, inside pita or as a sauce for roasted chicken.
