Quinoa golden raisin kale salad

 

Ingredients

  • 2 cups baby kale
  • 1/3 cup golden raisins
  • 4 cups cooked quinoa
  • 1/3 cup toasted pine nuts
  • 1/3 cup grated parmesan cheese
  • 1/2 small red onion, finely chopped
  • 1/4 cup olive oil
  • 3 tbsp. lemon juice
  • salt and pepper

Instructions

  1. Toss and eat.

Additional Notes

cooking quinoa: for every cup of uncooked quinoa put 2 cups water and 1 tsp salt. Bring to a boil, then simmer until water evaporated. Cover and let rest 5 minutes. READY!
