Achiote Glaze
Ingredients:
- 2 tbsp. achiote or annatto seed
- 1 tsp. coriander seed
- 1 tsp. cumin seed
- 1 tsp. black peppercorns
- 1/2 tsp. ground nutmeg
- 1/2 tsp. oregano
- 2 habanero chiles 30g
- 1 lemon 30g
- 1 orange 200g
- 4 garlic cloves
- 1/2 cup white wine vinegar 125 mL
- 1 tbsp. salt
Method:
- toast seeds and spices
- on a molcajete grind the spices
- puree all ingredients together in a blender
- marinate salmon, chicken, or your choice of protein
