Achiote Glaze

Ingredients:

  • 2 tbsp. achiote or annatto seed
  • 1 tsp. coriander seed
  • 1 tsp. cumin seed
  • 1 tsp. black peppercorns
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. oregano
  • 2 habanero chiles 30g
  • 1 lemon 30g
  • 1 orange 200g
  • 4 garlic cloves
  • 1/2 cup white wine vinegar 125 mL
  • 1 tbsp. salt

Method:

  • toast seeds and spices
  • on a molcajete grind the spices
  • puree all ingredients together in a blender
  • marinate salmon, chicken, or your choice of protein
