Lucy Lu's Chicken with Pineapple Sauce
Ingredients
- 1.5 lbs. chicken breasts, cubed
- 3 tbsp soy sauce
- 1 tbsp water
- 3 tbsp oil
- 1 tbsp cornstarch
- 1 tsp sesame oil
- 2 green onions
- 1 tbsp chopped onion
- 8 oz. chopped fresh or canned pineapple
- Sauce:
- 1/2 cup water
- 2 tbsp soy sauce
- 1/2 tsp cornstarch
- 1 tbsp grated fresh ginger
Instructions
- Marinate chicken with soy, water, 1 tbsp. oil, cornstarch, sesame oil 30 minutes at room temperature.
- Heat wok with 2 tbsp oil. Sautee scallions and onion until golden, Ass chicken and stir fry until cooked. Add pineapple and sauce, bring to a boil and stir until thickened.
