Earl Grey Madeleines



  • 4 eggs
  • 7 oz sugar
  • 6 oz flour
  • 1 heaped tsp baking powder
  • 6 oz butter
  • 1/2 cup honey
  • 2 bags earl grey tea, loosened


  1. In mixer mix eggs and sugar until thick and pale, 5 minutes. Sift flour and baking powder and mix into egg on slow speed. Melt butter with tea. Continue cooking until brown and nutty color. Strain butter to discard tea. Cool to room temperature and pour into mixture.
  2. Butter madeleine's molds and fill each one almost to the rim. Bake at 350F 5-10 minutes until edges are golden and center springs back when lightly touched.
