Russian Chicken Plov

 

Ingredients

  • 1 chicken, cut into 8 pieces
  • 2 cups good rice, rinsed three times
  • 2 lbs carrots, cut into thick shred
  • 5 oz raisins
  • 4 1/4 cups chicken stock
  • 2 onions, diced
  • 1 cinnamon stick

Instructions

  1. Soak rice for 1/2 hour in warm salt water.
  2. Brown chicken in vegetable oil and set aside.
  3. In a Le Crueset place chicken, carrots, onions, raising, cinnamon and drained rice in layers, with rice last. Cover with chicken stock. Put lid on pot but do not close totally.
  4. Simmer for 2 hours.
  5. Do not mix, Just vent holes throughout the rice to let out the steam.
