Russian Chicken Plov
Ingredients
- 1 chicken, cut into 8 pieces
- 2 cups good rice, rinsed three times
- 2 lbs carrots, cut into thick shred
- 5 oz raisins
- 4 1/4 cups chicken stock
- 2 onions, diced
- 1 cinnamon stick
Instructions
- Soak rice for 1/2 hour in warm salt water.
- Brown chicken in vegetable oil and set aside.
- In a Le Crueset place chicken, carrots, onions, raising, cinnamon and drained rice in layers, with rice last. Cover with chicken stock. Put lid on pot but do not close totally.
- Simmer for 2 hours.
- Do not mix, Just vent holes throughout the rice to let out the steam.
