Duck Breast in Apricot and Honey Sauce
Ingredients
- 2 duck breasts
- 1 tbsp. butter
- 10 apricots, pitted and halved
- ½ cup acacia or clover honey
Instructions
Scour the thick skin on the duck breast. Heat a heavy skillet on medium-high heat. Place the duck, skin down, in the skillet and cook until well browned. Turn over and cook another 3-5 minutes until pink in the middle. Remove duck breasts and wipe the skillet clean. Add 1 tbsp butter, then place the apricots in skillet and cook for 5 minutes on medium-low heat. Pour the honey in and take off heat. Pour over the duck.
