Shaking Beef

Beef:

  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tsp sugar
  • 1 ½ tsp cornstarch
  • 1 ½ tsp fish sauce (I like Three Monkeys)
  • ½ tsp pepper
  • 2 garlic cloves, smashed
  • 1 ½ lb. rib eye or NY strip, trimmed and thinly sliced

Salad:

  • ¼ thinly sliced red onion (optional)
  • 2 tbsp water
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 cups tightly packed watercress, arugula, curly leaf lettuce and other salad greens
  • ¼ cup finely chopped herbs (dill, mint, basil etc)
  • 2 tbsp neutral oil (canola, grapeseed)

1. Stir together everything including the meat, toss well and marinate for 20+ minutes at room temperature.

2. Whisk water, vinegar, honey, salt, pepper, until well mixed.  Put herbs and lettuce on top.  DO NOT TOSS YET

3. Heat oil in heavy, large skillet.  Add beef in a single layer.  Cook, shaking the pan every minute or so, until seared on all sides and cooked through (3-4 minutes for medium-rare).  Remove from heat.  Quickly toss salad, transfer to a platter and pile meat and juices on top.  Serve immediately.
