Masala Chai


  • 1 tsp skinned green cardamom (the shell is hard and inedible)
  • ½ tsp cloves
  • 3 cinnamon sticks
  • ¼ tsp fennel seeds
  • ¼ tsp peppercorns
  • ½ tsp grated nutmeg
  • 2 petals star anise


Grind all to a powder in a small food processor.  Mix ½ tsp. with 1 tsp of green tea or black tea leaves, and brew.  Real masala tea is served strong and with a lot of milk.  I like it as is and slightly weaker.
