Mrs. McCarthy's Award Winning Strawberry Scones
¾ cup of buttermilk
1 egg beaten
2 cups of flour
3 Tbs granulaed sugar
1 Tbs + 1 tsp Baking powder
½ tsp salt
1/3 cup Kerrygold Pure Irish butter = 5 1/3 Tbs cut to small cubes
Extra flour for dusting table and roller.
1-2 Tbs granulated sugar for topping.
1 jar good strawberry preserves
Fresh strawberries cored and cut into quarters
Clotted Cream or Whipped cream
1 Tbs shortening for baking sheet
Preheat oven to 425F.
In food processor combine all ingredients up to the butter and process until mixture resembles coarse crumbs. Transfer to a bowl.
Add buttermilk and egg. Round it up to 1 cup of liquid. Mix until combined.
Transfer to a floured surface and gently knead 5-6 times. Roll into a rectangle 1/2" thick. Cut and put on cookie sheets. Lightly sprinkle sugar on top.
Bake in center of oven 12 minutes or until lightly browned.
Mrs McCarthy halves her scones, puts fresh strawberries and strawberry preserves int he center and adds clotted cream. I only use whipped cream and drizzle honey on each half.
