Eyal Shani Cauliflower



  • 1 head cauliflower
  • 1 tsp olive oil


  1. Preheat oven to 550F (yes, 550F - no typo).
  2. Bring a large pot of water with 1 tbsp salt to a boil. Cook cauliflower in it for 12 minutes. Take the cauliflower out and drain on a sieve for 5 minutes.
  3. Run oil between your palms and rub the cauliflower in the oil. Place on a rimmed baking sheet (I use a round cake pan) and bake 25-35 minutes.
  4. Cauliflower should be very well done, crisp outside and nicely browned. It's SO GOOD.

Additional Notes

I fell in love with this cauliflower when we dined at North Abraxas in Israel, Shani's first restaurant, around 2015. We tried making at home numerous times and failed. Dick said we should boil it and I said no. I was very wrong. This recipe works perfectly.
