Liat's Fajitas

 

Ingredients

  • 1 lb chicken breasts, cut into strips
  • 1 lb good quality steak, cut into stripes
  • Marinade:
  • 2/3 cups lime juice
  • 1/3 cup olive oil
  • 1/2 cup cilantro, chopped
  • 3 tbsp smoked Spanish paprika
  • 4 cloves garlic, peeled and minced
  • 1 tsp cumin
  • 1 tsp kosher salt
  • Vegetables:
  • 1 onion, thickly sliced
  • 2 yellow peppers, sliced
  • 2 red peppers, slices
  • 2 poblano peppers, sliced
  • Condiments:
  • pico de gallo, purchased
  • sour cream
  • flour tortillas

Instructions

  1. Marinade the chicken and meat in the marinade overnight or at least 4 hours.
  2. Sautee the meat and marinade to desired doneness. Concurrently sauté the vegetables in a little olive oil until cooked but crisp. Mix half the veggies with the steak and half with the chicken.
  3. Serve with warm tortillas and the condiments.
