Liat's Fajitas
Ingredients
- 1 lb chicken breasts, cut into strips
- 1 lb good quality steak, cut into stripes
- Marinade:
- 2/3 cups lime juice
- 1/3 cup olive oil
- 1/2 cup cilantro, chopped
- 3 tbsp smoked Spanish paprika
- 4 cloves garlic, peeled and minced
- 1 tsp cumin
- 1 tsp kosher salt
- Vegetables:
- 1 onion, thickly sliced
- 2 yellow peppers, sliced
- 2 red peppers, slices
- 2 poblano peppers, sliced
- Condiments:
- pico de gallo, purchased
- sour cream
- flour tortillas
Instructions
- Marinade the chicken and meat in the marinade overnight or at least 4 hours.
- Sautee the meat and marinade to desired doneness. Concurrently sauté the vegetables in a little olive oil until cooked but crisp. Mix half the veggies with the steak and half with the chicken.
- Serve with warm tortillas and the condiments.
