Eton Mess



  • 3 large eggs white
  • 6 oz sugar
  • 1 lb strawberries, halved or quartered
  • 2 cups heavy cream + 2/3 cup sugar


  1. Preheat oven to 250F. Line a 9" cake pan or a pan of similar size with parchment.
  2. Beat the whites until soft peaks. Add the sugar gradually and beat well. Spread in pan and bake 1-1 1/4 hours until meringue is baked.
  3. Whip cream and add sugar.
  4. Layer the three elements - meringue, berries and cream, in a glass or trifle bowl. Serve as is.
