Miki's Ramen
Ingredients
- 1 medium onion, finely chopped
- 1 garlic clove, minced
- 1" fresh ginger, peeled and finely chopped
- 1 tbsp vegetable oil
- 2 carrot, grated or thinly sliced
- 1 celery stalk, thinly sliced
- 1 tbsp curry (Madras is the mildest, which I like)
- 1 tsp salt
- 1/2 tsp sweet paprika
- 1/2 tsp pepper
- 2 cups water or coconut milk
- 2 cubes chicken bouillon
- 1 packet ramen noodles
- 3 tbsp fresh cilantro. chopped
Instructions
- Sauté onion, ginger and garlic in oil until softened, about 5 minutes. Add carrot and celery and sauté another 3-5 minutes. Add spices and continue cooking for 1 minute. Add water with chicken bouillon or coconut milk and cook for an hour.
- Miki processes the mixture into a smooth paste. I like the vegetable texture so I don't.
- Add the ramen and cook as instructed. I garnish with fresh cilantro.
