Miki's Ramen

 

Ingredients

  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1" fresh ginger, peeled and finely chopped
  • 1 tbsp vegetable oil
  • 2 carrot, grated or thinly sliced
  • 1 celery stalk, thinly sliced
  • 1 tbsp curry (Madras is the mildest, which I like)
  • 1 tsp salt
  • 1/2 tsp sweet paprika
  • 1/2 tsp pepper
  • 2 cups water or coconut milk
  • 2 cubes chicken bouillon
  • 1 packet ramen noodles
  • 3 tbsp fresh cilantro. chopped

Instructions

  1. Sauté onion, ginger and garlic in oil until softened, about 5 minutes. Add carrot and celery and sauté another 3-5 minutes. Add spices and continue cooking for 1 minute. Add water with chicken bouillon or coconut milk and cook for an hour.
  2. Miki processes the mixture into a smooth paste. I like the vegetable texture so I don't.
  3. Add the ramen and cook as instructed. I garnish with fresh cilantro.
