Apricot Semifreddo
Ingredients
- 1/2 cup water
- 1/2 cup + 2 tbsp. sugar
- 4 egg yolks
- 1 cup whipping cream
- 1 cup minced, pitted apricots or other fruit
Instructions
- In a small pan with heavy bottom combine water and 1/2 cup sugar until it turns golden. Carefully pour in boiling water - mixture may spatter. Cook on low heat until mixture turns caramel color.
- In the mixer beat yolks with 2 tbsp. sugar for 5 minutes. With mixer running, slowly pour in the caramelized sugar mixture. Continue beating until mixture has the consistency of softly whipped cream.
- In another bowl whip cream to stiff peaks. Fold in egg mixture. Freeze in a container for 4 hours.
