Apricot Semifreddo

Ingredients

  • 1/2 cup water
  • 1/2 cup + 2 tbsp. sugar
  • 4 egg yolks
  • 1 cup whipping cream
  • 1 cup minced, pitted apricots or other fruit

Instructions

  1. In a small pan with heavy bottom combine water and 1/2 cup sugar until it turns golden. Carefully pour in boiling water - mixture may spatter. Cook on low heat until mixture turns caramel color.
  2. In the mixer beat yolks with 2 tbsp. sugar for 5 minutes. With mixer running, slowly pour in the caramelized sugar mixture. Continue beating until mixture has the consistency of softly whipped cream.
  3. In another bowl whip cream to stiff peaks. Fold in egg mixture. Freeze in a container for 4 hours.
