Blueberry Lemon Loaf

Ingredients

  • 1/2 cup canola oil
  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • Dash of salt
  • 1 cup sugar
  • 3 egg3
  • 1 tsp vanilla extract
  • 1 tbsp grated lemon zest
  • 1 cup plainyogurt
  • 1/3 cup milk
  • 1 ½ cups blueberries

Instructions

  1. Preheat over to 350F. Pam a loaf pan.
  2. Mix flour, baking powder and salt. Add wet ingredients and mix well but not too much.
  3. Bake 45 minutes; then cover with foil and bake another 15 minutes or until cake tester comes out clean.
  4. NOTE: You can replace ½ cup wheat flour with almond flour. It will enrich the cake and make it taste more moist. Dick is allergic to nuts so I can't do it…
  5. Note: nYou can drizzle on top a mixture of 1 1/2 cups confectioners’ sugar and 2-3 tbsp lemon juice. It’ll make the cake more lemony. Alternatively use milk instead of lemon juice.
