Blueberry Lemon Loaf
Ingredients
- 1/2 cup canola oil
- 1 3/4 cup flour
- 2 tsp baking powder
- 1 tsp cinnamon
- Dash of salt
- 1 cup sugar
- 3 egg3
- 1 tsp vanilla extract
- 1 tbsp grated lemon zest
- 1 cup plainyogurt
- 1/3 cup milk
- 1 ½ cups blueberries
Instructions
- Preheat over to 350F. Pam a loaf pan.
- Mix flour, baking powder and salt. Add wet ingredients and mix well but not too much.
- Bake 45 minutes; then cover with foil and bake another 15 minutes or until cake tester comes out clean.
- NOTE: You can replace ½ cup wheat flour with almond flour. It will enrich the cake and make it taste more moist. Dick is allergic to nuts so I can't do it…
- Note: nYou can drizzle on top a mixture of 1 1/2 cups confectioners’ sugar and 2-3 tbsp lemon juice. It’ll make the cake more lemony. Alternatively use milk instead of lemon juice.
