Amankora Chocolate Cookies

Dick fell in love with these cookies and the hotel chef was kind enough to share the recipe with me.

1 lb. flour

4 oz. Dutch processed cocoa

½ tsp. salt

10 oz. butter, softened

1 lb. sugar less 2 tbsp.

1 ½ tsp vanilla extract

2 large eggs

Sift dry ingredients. Mix butter and sugar until fluffy. Add vanilla and eggs, one at a time.

Stir in the flour on low speed. Make sure the dough is consistent..

Flatten into a square and wrap in plastic wrap. Chill at least 2 hours before rolling.

Roll the dough thin (1/4 of an inch) and cut into small rounds (use #2 cutter or a small cup or an egg cup). Arrange on parchment and freeze until needed.

To bake: thaw slightly on oiled sheets, then bake 10 minutes in 350F oven or until firm and dry.
