Crab Wraps

A fabulous, sophisticated and snap-to-make appetizer.

1 cup lump crab meat (don't compromise - use the best or use smoked trout instead)

¼ cup mayonnaise

1 heaped tbsp. Dijon mustard (I like Maille; you can also use their green peppercorn mustard for extra flavor)

2 scallions, chopped

1 tbsp. olive oil

1 tbsp. lemon juice

Head of Boston lettuce

Mix all but the lettuce. Put a tablespoon of mixture on each lettuce leaf, serve and enjoy.
