Oatmeal Raisin Scones

I love the taste of oats but can't stand the texture of oatmeal.  The perfetc solution: oatmeal raisin scones.  On top of their great taste, they are healthy too.

 

2 cups rolled oats

2 cups sifted all purpose flour

½ cup sugar

1 tbsp baking powder

½ tsp baking soda

¼ tsp salt

6 tbsp (3/4 stick) chilled butter, cut into small cubes

2 tbsp honey

2/3 cup raisins

1 ¼ cup (abut) buttermilk

 

Preheat over to 375F.

 

Finely grind 1 cup oats in processor.  Blend in flour, sugar, baking powder, baking soda and salt.  Add butter and pulse until mixture resembles coarse meal.  Transfer to a large bowl.  Add the raisins and remaining oats.  Make a well in center of mixture.  Gradually mix in enough buttermilk and the honey to form moist dough.

 

Gently knead dough on a lightly floured board surface until smooth, about 10 turns.  Divide into 3 pieces.  Pat each into a ¾ inch thick round on a floured surface. Cut each into quarters.  Brush with half and half and sprinkle with sugar.  Transfer to a baking sheer.  Bake until golden brown, about 28 minutes.

 

I like these with a dollop of softly whipped whipping cream (NOT heavy whipping cream), sweetened, and a drizzle of honey.
