BEEF SHORT RIBS

 

Ever since Guy, 36, was 10 years old and fell in love with the short ribs on Braniff airlines, I've been looking for a solid short ribs stew recipe.  Here's the winner.

 

3 lbs. LEAN short ribs

½ tsp. salt

¼ tsp. pepper

1 cup diced onion

3 cloves garlic, minced

14 oz. beef broth (or 1 cup water with 2 beef bullion cubes dissolved in it)

1 cup pomegranate juice

1 cup ketchup

2 tbsp. Worcester sauce

2 tbsp. soy sauce

1 tbsp. fresh thyme

 

Preheat over to 350F.  Brown short ribs well on all sides in a Dutch oven.  Season well.  Add onion and garlic and sauté 4 minutes.  Add all other ingredients and bring to a boil.  Cover tightly and bake for 2-2 ½ hours until fork tender.

 

Mashes potatoes are an ideal companion to this dish.
