APPLE GALETTE

 

Liat likes apple desserts, but not thick ones, because she doesn't like mushy food.  So an apple galette is her favorite.  We once had it at the Four Seasons in Langkawi, Malaysia of all places, and she's been pining for it ever since.  This recipe is the closest I could get to the original:

 

Crust:

 

1 ¾ cups flour

¼ tsp salt

1 ½ stick chilled, unsalted butter, cut into ½ inch cubes

2-3 tbsp ice water

 

Fruit:

 

1 ½ lbs. granny smith apples, peeled, cored and cut into thin slices

4 tbsp sugar

1 tsp grated lemon peel

¼ cup apple jelly

 

Blend flour and salt in processor.  Add butter and pulse in until mixture resembles course meal.  Add ice water and blend just until dough begins to clump together.  Gather into a ball, flatten into a disc and chill for 1 hour.

 

Roll out the dough on a floured surface to a very thin round (1/8 inch).  Put on a baking sheet and chill 15 minutes.

 

Preheat over to 450F.  Spread jelly on the crust.  Combine apple slices, sugar and lemon peel in a bowl.  Arrange apples in circles atop the crust and sprinkle with additional sugar.

 

Bake 20 minutes, then reduce heat to 375F and bake until crust is golden, abuot 30 more minutes.  Let rest before you slice at least 10 minutes.

 

Need I say bring the whipped cream and ice cream along?
