Dutch Baby

Breakfast can be an exciting meal!

3 large eggs

½ tsp. finely grated lemon zest

1/3 cup sugar

2/3 cup flour

2/3 cup milk

2 cups peeled, cored and diced Granny Smith apples

4 tbsp unsalted butter

Preheat over to 425F. Also heat a 10" cast iron skillet over moderate heat.

Whisk eggs, lemon zest and sugar until combined. Add flour and milk and whisk until smooth. Add apples.

Melt butter in skillet and add batter, spreading evenly. Bake in center of over 22 minutes until edges are browned and puffed and the center is browned in spots. You can pretty it up with powdered sugar sprinkling, or serve as is.
