Sea Bass In Thai Style

This recipe is lean, mean and delicious. You can use any sea bass or halibut filets for the dish. My favorite is Chilean sea bass, which is snow-white, but it can get pricy.

2 6 oz. sea bass filets

1 bunch fresh cilantro, chopped

1 tbsp. fresh ginger, chopped

¼ cup orange juice

Juice from one lemon

3 tbsp. soy sauce

1 bunch scallions, chopped

2 tbsp. white rice vinegar

½ tsp. chili paste of any kind

Preheat over to 450F.

Mix all ingredients except for fish. I use a food processor to chop all ingredients together except for the scallions.

Place fish on foil 9" square cake pan. Pour sauce on top. Bake 20 minutes or until done (doneness greatly depends on the thickness of the filet; 20 minutes are good for an 1" thick fish).
