Salmon En Papillotte

Dick loves fish. I generally feel fish is too fishy, and certainly too smelly, no matter how fresh it is. This dish met both our needs: the fish is wrapped in foil and baked in a neat little packet in the oven. No smell, no fuss, no muss.

S2 heads baby bok choy, cut lengthwise into 6 pieces

2 salmon filets

T tbsp. fresh orange juice

1 tsp finely grated orange peel

1 scallions, thinly sliced

2 tbsp hoisin sauce

2 tsp minced peeled fresh ginger

1 tsp cracked coriander seeds

¼ cup fresh coriander leaves

Preheat over to 425F.

Prepare to 12"X12" foil squares. Put bok choy in center of each. Put salmon on top of bok choy. Mix all remaining ingredients and pour on top. Seal foil packets. Place on baking sheet and bake 12-14 minutes until just opaque in the center. Serve.
