COWBOY COFFEE CAKE WITH CARAMEL ICING

This recipe came from Steve Lewis’ grandmother, which makes it even more special for me. Steve is CEO of First Place Bank, and a well–rounded individual across many fronts. I am glad he shares my love for food and keeps true to his culinary roots.

Cake:

2 ½ c. sifted flour

½ tsp. salt

2 cups brown sugar

⅔ cup butter

2 tsp. baking powder

½ tsp. baking soda

½ tsp. cinnamon

½ tsp. nutmeg

1 cup buttermilk

2 beaten eggs

Combine all ingredients and mix well. Pour into a greased 13X9X2 pan. Top with crumbs. Bake at 350F 25 – 30 minutes.

Crumbs:

1 cup sugar

1 cup flour

1 tsp. cinnamon

½ cup melted butter

Mix together to form crumbs.

Caramel icing: (enough for 1 8X8 pan; double for 9X13 pan)

9 tbsp. ( 1 cup) brown sugar

9 tbsp. half and half cream

3 tbsp. butter

Powdered sugar

Bring to a boil and boil for 2 minutes. Let cool and thicken with powdered sugar as needed.
